4 CLEAN & SIMPLE RECIPES FOR YOUR EASTER BRUNCH MENU

2 salty and 2 sweet springtime dishes to add to Sunday's spread. These are all gluten-free, dairy-free and couldn't be easier to pull together.

EVERYTHING BAGEL DEVILED EGGS

I took a page out of my sister, Caroline's book for these. She's always added soy sauce to her deviled eggs for saltiness. To achieve the same effect, I've added a touch of liquid aminos as a healthier alternative.


what you'll need:

  • 6 hard boiled eggs

  • 2 tbs avocado mayo

  • 1 tsp yellow mustard

  • 1/2 tsp Bragg liquid aminos (or gluten free tamari)

  • cracked black pepper to taste

  • everything seasoning

directions:


WHISK egg yolks with mayo, mustard, aminos + pepper

FILL halved egg whites with mixture

SPRINKLE with seasoning


SPRING BREAK GRILLED CHICKEN SALAD

I can't make this without being mentally transported to Palm Beach. This salad has been a Florida vacation staple for as long as I can remember. It's the simplest recipe but the non-negotiable is that the chicken must be grilled first for flavor. This one's even better on day 2 so make extra.


COMBINE:

  • 2 grilled chicken breasts, cubed

  • 4 celery stalks, diced

  • a big handful of red seedless grapes, quartered

  • 1/4 red onion, diced

  • 3/4 cup avocado mayo

  • pink salt & cracked black pepper to taste

SERVE chilled in lettuce cups, on croissants or alone.


CARROT CAKE WITH CINNAMON MAPLE CREAM CHEESE


what you’ll need for the cake:

  • 1 1/4 cup almond flour

  • 3/4 cup oat flour

  • 1 1/2 tsp baking powder

  • 1 tsp cinnamon

  • 1/2 tsp fine sea salt

  • 1/2 cup ghee at room temp

  • 1/2 cup coconut sugar

  • 1 tsp vanilla extract

  • 2 large eggs

  • 1 packed cup grated carrot (2-3 peeled carrots depending on the size)

for the frosting:

  • 1 container plain cream cheese at room temp (i used Miyokos Creamery dairy free)

  • 2 tbs maple syrup

  • cinnamon to taste

directions:


PREHEAT oven to 350

GREASE a loaf pan with ghee or coconut oil

WHISK dry ingredients in a large mixing bowl

BEAT ghee + sugar in a stand mixer until creamy

ADD vanilla + eggs to mixer & beat again until combined

FOLD in carrot

COMBINE wet + dry ingredients

POUR batter into loaf pan

BAKE for 40 min

COOL in the pan completely before flipping cake upside down to remove

MIX frosting ingredients

SPREAD cake with cream cheese frosting & slice to serve
