CINNAMON ALMOND BUTTER SANDWICH COOKIES

A seasonal upgrade to my peanut butter protein cookies. This batter is made with only 4 ingredients and is completely gluten-free.


WHAT YOU'LL NEED:


for the cookies

  • 1/2 cup almond butter

  • 1/2 cup vanilla Orgain plant-based protein powder

  • 1/4 cup maple syrup

  • 1 tsp cinnamon

for the cinnamon almond butter

  • 1/2 cup almond butter

  • 2 tbs protein powder

  • 1/2 tbs maple syrup

  • 1/2 tsp cinnamon


DIRECTIONS:


PREHEAT oven to 350

LINE a baking sheet with parchment paper or a silicone mat

MIX cookie ingredients

PLACE 1 tbs of batter onto baking sheet (will make about 16)

FLATTEN cookies with a fork

BAKE for 12-15 min

COMBINE cinnamon almond butter ingredients

SPREAD first cooled cookie with almond butter

PRESS second cookie on top to create a ‘sandwich’
