GLUTEN FREE BANANA BREAD

If you have ripe bananas on your counter, don’t act like you don’t know what to do.

WHAT YOU'LL NEED:

  • 1 cup coconut sugar

  • 1 stick room temperature unsalted butter or ghee ((i use grassfed irish butter here)

  • 2 tsp vanilla extract

  • 5 large bananas, mashed

  • 1 3/4 cup oat flour

  • 1 tsp baking soda

  • 1/2 tsp fine pink salt

DIRECTIONS:


PREHEAT oven to 350

BEAT coconut sugar & butter on medium speed

ADD vanilla, eggs & bananas

BEAT again until combined

WHISK dry ingredients in a separate bowl

MIX wet ingredients into the dry ones until well incorporated

POUR batter into an 8x8 baking dish lined with parchment paper

BAKE For 45 min

COOL in the pan before slicing


Serve this one warm with a smear of almond milk cream cheese. Trust.
