These fun little bites are ridiculously easy to make, my girl throws them together all on her own. She loves to roll them out for an after-school snack, lunchbox treat or for quick dance energy.
1 cup gf rolled oats
1/2 cup unsweetened nut butter
1 tbs maple syrup
1 tsp cinnamon
MIX all ingredients together in a large bowl until combined.
ROLL into 1 tbs balls and place in a container in the freezer.
When ready to serve, allow to sit at room temperature for a few minutes. If the batter seems a bit dry, you can add a little melted coconut oil or extra peanut butter to bring it together.
The beautiful thing about this recipe is that it’s so versatile. Use whatever you have on hand. Toss in cacao nibs, dried fruit or chopped nuts in place of the chocolate chips. Use honey or agave instead of maple syrup. Mix in your favorite nut butter or roll in shredded coconut, dried matcha or protein powder. If you whip these up at home, Kendall and I would love to see!
