NO MESS BAKED PENNE WITH SAUSAGE & PEPPERS
All you need to survive motherhood during a pandemic are a handful of ridiculously easy meals (...and coffee). You know, the kind you keep stored in your mental arsenal because they require so little bandwidth and so few ingredients. This is one of those dinners for us. It's a one pan situation with no need to boil the pasta in advance and very little clean-up.

WHAT YOU'LL NEED:
1 tbs olive oil
1 lb uncooked penne (we love Banza)
4 chicken sausages, sliced into coins (I use Applegate brand)
1 large bell pepper, sliced
2 cups unsweetened almond milk
1 24oz jar pasta sauce (Rao’s is king)
2 tsp dried italian seasoning
baby arugula
DIRECTIONS:
PREHEAT oven to 400
MIX all ingredients but the arugula in a 9x13 baking dish greased with 1 tbs olive oil
BAKE for 40-45 min, tossing halfway thru
FOLD in a few big handfuls of arugula before serving
