REMIX YOUR LEFTOVERS: SHREDDED CHICKEN 5 WAYS

Coast through 5 meals with 1 big batch of shredded chicken. Shortcut the process with rotisserie chicken or do like I do and put your Instant Pot to work.


1. SALSA VERDE CHICKEN FAJITA BAKE

PREHEAT oven to 400 degrees

SAUTÉ 1/2 large onion + 2 green bell peppers thinly sliced in avocado oil

SHRED 4 cooked chicken breasts (i did mine in the instant pot)

TOSS shredded chicken with 1/2-3/4 jar salsa verde

SPRAY 9x13 baking pan with avocado oil

LAYER 2-2 1/2 tortillas on the bottom of pan (i’m using @sietefoods cashew flour tortillas)

SPREAD 1/3 of chicken + 1/3 of peppers&onions + 1/3 can of drained pinto beans + a generous sprinkle of shredded cheese (i use an organic raw grassfed cheddar) evenly over the tortillas

REPEAT process for 2 more layers

TOP with tortillas and COVER with foil

BAKE for 45 min

REMOVE foil, SPRINKLE with more cheese & pop back in the oven until melted & slightly golden brown (about 5-10 extra min)

SERVE with avocado, extra salsa verde + fresh cilantro

4. CHICKEN ENCHILADAS VERDES WITH CASHEW QUESO

PREHEAT oven to 350 and spritz a 9x13 baking dish with avocado oil spray

SHRED 2-3 cooked chicken breasts (i usually throw mine in the instant pot, 8min per breast)

TOSS chicken with 3/4 jar of siete cashew queso + 1 can diced green chiles until coated

WRAP tortillas in a damp paper towel and microwave for 1 min (i’m using siete cashew flour tortillas. almond flour works too)

POUR 1/2 jar salsa verde into the bottom of your baking dish

FILL tortillas with chicken mixture, roll them up & place them seam side down in the baking dish

SMOTHER enchiladas in the remaining salsa + queso

BAKE for 20 min

GARNISH with fresh cilantro


5. CHICKEN CAESAR PIZZA

PREHEAT oven to 400

COOK & SHRED 1-2 chicken breasts depending on the size (i throw mine in the instant pot with a little water for 8min per breast)

TOSS chicken with a few tbs clean caesar dressing until coated (i’m using @primalkitchenfoods )

BAKE frozen crust on a baking sheet or pizza pan for 4-5min (the package comes with 2 inside)

LAYER each with chicken & shredded parmesan (or manchego)

RETURN pizza to the oven for another 4-5min or until cheese is melted & edges of crust are golden brown

REMOVE & top with chopped romaine dressed with caesar

FINISH with extra cheese & cracked black pepper
