SHEET PAN APPLE SAUSAGE & POTATOES

Every pregnancy, I’ve craved acidic foods.

With Kaela, it was limeade & salsa. With kendall, deviled eggs & salt/vinegar chips. With harlow, I ate marinara & tomato soup on the daily & with this baby, I crave grapefruit juice, pickles & sauerkraut. Yes, sauerkraut. This recipe requires little to no attention & makes for the perfect German-style gameday meal. It also reheats well if you’re the #mealprepsunday type & cleanup takes 2 seconds. Enjoy.

WHAT YOU'LL NEED:

  • 2 packages chicken apple sausages (we love Applegate no sugar added)

  • 1.5 lbs baby red potatoes, halved with skin on

  • 4 apples, sliced into 4 large wedges

  • 2 tbs olive oil

  • pink salt & black pepper

DIRECTIONS:


PREHEAT oven to 400

SPREAD sausage, potatoes & apples on sheet pan

COAT with olive oil, salt + pepper

ROAST for 40-45 min, tossing halfway thru

SERVE with sauerkraut & spicy mustard
