SPICY PEANUT KALE SALAD

This dish is inspired by my favorite kale salad of all time. No one does it like the restaurant group that crafted it, but a girl can try. It has just the right amount of spice to breathe a little fire into the creaminess of the peanut butter. You'll want to make extra of this because it's even better the next day, trust me.


WHAT YOU'LL NEED


Salad:

  • 1 bunch kale, spine removed

  • 1/2 head green cabbage

  • 1 cup mint leaves, stems removed

  • 1 bunch cilantro, stems removed

  • 4 green onions, white and green parts

  • 1/4 cup peanuts or cashews (I use dry roasted or raw)

  • shredded chicken (optional)


Dressing:

  • 1/3 cup toasted sesame oil

  • 2 tbs coconut aminos

  • 2 tbs powdered peanut butter (regular works great too)

  • 1 tsp yellow mustard

  • 1/4 tsp garlic powder

  • 1/4 tsp red pepper flakes

  • 1/8 tsp salt


DIRECTIONS


CHOP kale, cabbage, mint, cilantro + onions finely

WHISK dressing ingredients until combined

TOSS greens + chicken (if using) in dressing until coated

CHILL in the fridge for at least 30 minutes before serving

TOP with nuts
