This dish is inspired by my favorite kale salad of all time. No one does it better than the restaurant that serves this crazy amazing salad, but I gave it my best shot. It has just the right amount of spice to breathe a little fire into the creaminess of the peanut butter. Be prepared to eat this one with a spoon in massive amounts.



1 bunch kale, spine removed

1/2 head green cabbage

1 cup mint leaves, stems removed

1 bunch cilantro, stems removed

4 green onions, white and green parts

1/4 cup chopped unsalted roasted peanuts


1/3 cup toasted sesame oil

2 tbs coconut aminos

2 tbs powdered peanut butter

1 tsp yellow mustard

1/4 tsp garlic powder

1/4 tsp red pepper flakes

1/8 tsp salt

optional: a sprinkle of cayenne for extra heat


Finely chop kale, cabbage, mint, cilantro and onions. Whisk together dressing ingredients until combined. In a large bowl toss salad ingredients in dressing. Allow to chill in the fridge for at least 30 minutes before serving. Top with peanuts and enjoy!
